How much effort is required to map a business process?

We are trying to map out a process by which one or more business analysts would interview key members of an organization with the intent of mapping out their various approval processes. We’re looking for a rough ballpark of the amount of time/FTE required to take information gathered during the interview process and convert it into a flow chart/process map.
